Chicken Meatballs & Tzatziki

If you want a quick meal, just get these items from Sam’s and enjoy! Lol Of course, though, I like to do things the long way. I got inspired and decided to re-create what I saw in the store!

Make yourself a coffee or cocktail, and get comfy to read this super-long post! First, we’re making tzatziki dip so that it can have time to rest in the refrigerator.

Now, let’s get started on the meatballs. You could use pre-mixed Greek seasoning…or you could make your own!

I let the ingredients listed on the packaging be my guide, so I sautéed a bag of spinach and caramelized one yellow onion.

Next, I needed to kill some time while these ingredients cooled down a bit. You can use this time to make a drink, wash dishes, chase the kids, OR be smart…prep the potatoes to roast.

Set the potatoes aside until you’re ready to roast them at 425 degrees for about 30-35 minutes.

Now that the spinach and onions have cooled a bit, squeeze off the liquid from the spinach and chop before adding to the ground chicken.

Gently mix the ground chicken, chopped spinach, caramelized onions, the Greek seasoning, and half the container (2oz?) of Feta cheese. Then, roll the mixture into small balls. My mixture made 24 meatballs.

I suppose you could cook these right away, but I put the formed meatballs into the freezer for about 30 minutes to make sure they’d be firm enough to keep their shape. You can take a chance on not freezing to save time, but again, we’re taking the long route! Lol

Whew, almost done. Assuming you roasted the potatoes right away, they should be finished by now.

To make sure the meatballs are cooked through, place them in the still-warm oven to rest.

Ok, I’m not sure how long it will take on your end, but I honestly lost track of how long it took me to complete this process. I ended up feeding the kids something else because they needed to get in bed!
