Every few months I remember to eat healthier! l usually say I’m “trying to try” again! lol This Greek salad allows me to keep things light while still letting me have all the great flavors I enjoy.

While you can definitely customize for your taste, here’s what I used:
- Romaine Lettuce
- Hard Salami
- Feta Cheese
- Kalamata Olives
- Manzanilla Olives
- Roasted Red Peppers
- Banana Pepper Rings
- Greek Vinaigrette Salad Dressing
Sometimes I switch things up and add cherry tomatoes, fresh green bell pepper, and a bit of diced red onion. I feel like as long you have a a heap of greens, feta cheese, and a tasty Greek dressing you’re on the right path.

I like to dress the greens and toss it around a bit before adding the toppings to make sure the greens are coated, but not unnecessarily soaked. A little salad dressing can go a long way.





As you can see, I just sliced or chopped the ingredients to be bite sized and layered them all on top of the lettuce. You shouldn’t need anymore salad dressing, but you can definitely add a drizzle at the end if you’d like!

Well there’s one dinner for next week solved. Thanks for sharing, especially the brand of salad dressing because I can never seem to get my salads to taste like the ones I get at Chop Stop (or wherever other restaurant where I order salad).
Doesn’t matter if you have all the same ingredients or not if the dang salad dressing isn’t right. LOL I have several bottle of Ken’s in my fridge right now that are tasty so I have high hopes for the Greek one!
