Let’s Just Work with This

This past weekend I wanted to make another easy Game-day dinner with fun beverage.  I decided on Philly Cheese Steak sandwiches and my go-to margaritas. The thing is, neither recipe went the way you might think.

I already had ground beef in the fridge, so I knew I would use that instead of the usual steak.  No problem! Here’s how quickly those tasty sandwiches came together:

What I used

  • 1 lb Ground Beef
  • Diced yellow onion and green bell pepper
  • Provolone cheese slices
  • 1 pack of Philly Steak rolls (you can use hoagie rolls or whatever else you like)
  • Salt, pepper, garlic powder, onion powder, Worcestershire sauce

Brown the beef, drain, then add seasonings.  In a separate pan, saute the onions and peppers (use a little oil, season with salt & pepper).

Now you’re ready to assemble! Use cooking spray to oil a baking sheet, then place the opened rolls side-by-side.  Add the beef, onions&peppers, then cheese slices to the bottom part of the rolls.  Oil the top part of the rolls cooking spray.  Broil on low until the cheese is as melted as you’d like. Done!

Now, about this beverage. You can get the recipe I was planning to make by joining my neighborhood. Since the store didn’t have limeade, I figured I’d make something work with lemonade.  I’m reluctant to share this recipe with you because it’s not quite “there” yet, but maybe you can make it work for you! Here’s a rough draft of something like a Pineapple Margarita:

What I used

  • 1 can* of frozen lemonade
  • 1 can of gold tequila
  • 1 can of pineapple juice (you may want to taste and 1 more can)
  • 1/2 can of lime juice
  • 1/2 can of triple sec
  • 2 cans of water

* All the measurements are using this same can after the lemonade is emptied.

Whatever you want to call this, we enjoyed it! Even though my idea didn’t go as planned, I made a tasty drink by working with what I had.
