I have to admit from the start, these are meal ideas…not exactly full recipes. I’ve been super busy the past couple of weeks, but I still want to share with you! Here are three relatively quick, easy meals.
Breakfast: Banana Bread Oatmeal
This particular day I microwaved one serving of Old Fashioned Oats (1/2 cup oats, 1 cup water), then topped it with some bananas my son didn’t finish. I mixed those in and added sugar, cinnamon, and vanilla. Done.
Brunch: Steak & Sweet Potato Bowl
What do you do when you run out of eggs? Have a meal without eggs! Lol I had three small pieces of steak left from the pack I used in my Sunday Brunch post. I cut the steaks into small cubes and cooked them with diced onions and green peppers until tender.
While the steak was simmering, I microwaved diced sweet potatoes for five minutes, then roasted on 400 for 15 minutes. I tossed the sweet potatoes in olive oil, salt, pepper, and a little cinnamon.
Finally, I prepared my usual cheese grits for the base of this brunch bowl. As you can see in the picture, the grits were topped with the steak and sweet potatoes…then I added a bit of salsa for an extra punch of flavor.
Dinner: General Tso’s Chicken
General Tso’s Chicken is one of my favorite take-out meals. I found this bottle of sauce at my favorite store, Aldi, so I decided to make my own. The chicken is usually fried, but I baked mine.
I cut chicken thighs into approximately 2 inch pieces, tossed them in cornstarch, then baked on a rack for 30 minutes at 450 degrees. I prepared the chicken this way so that it would get crispy/firm, and the oil would drip away from the meat. After the baking was complete, I transferred the chicken to a skillet and tossed it in the sauce. I only used half the bottle so the chicken would be coated, but not swimming in sauce.
While the chicken was cooking, I roasted broccoli and baby carrots (30 minutes at 450…same as the chicken). I would usually roast the veggies at 400 degrees, but since they had to share the heat I figured it would even out…it did.
I made a quick pot of white rice, and dinner was ready!
Food doesn’t have to be fussy or complicated to be delicious. I hope you’ll enjoy these easy meal ideas!
