Nope, I’m not Vegan…not yet…but I am always looking for ways to make our meals healthy, but flavorful. Check out these easy green beans.

These are the main ingredients:
- Fresh green beans
- Apple Cider Vinegar
- Soy Sauce
- Olive oil
- Onion & Garlic
Sautee half an onion in olive oil until it gets a little golden, then add some minced garlic. Sautee for another minute or so, then add the green beans.
My pan looks a little crowded, but it all worked out once the beans cooked down a bit.

As usual, I didn’t measure these ingredients. I will say because the vinegar is so strong, you’ll probably want to do a 2:1 soy sauce to vinegar ratio. I did a couple of splashes/glugs of ACV and maybe 10 shakes of soy sauce! lol
Bring the mixture to a boil, then reduce the heat, cover and simmer for 30 minutes. Stir occasionally.

Done! These green beans were tender, but still firm enough to taste fresh. The flavor was amazing and I didn’t use a single animal product! (You know I love my bacon grease and butter!)
