January is usually when winter truly kicks in around here, so soup is always a good choice! I love any type of taco, soooo taco soup it is!
There are several recipes for taco soup, but this particular day I didn’t feel like looking one up while I was at the store. I just went with my general knowledge and taste. Here’s my take.

Ingredients:
- 1 lb of ground beef
- 2 cans of black beans
- 2 cans of diced tomatoes (I used fire roasted, but the ones with green chilis would be good for extra heat)
- 2 cans of corn
- 1 pack of taco seasoning
- Onion & Green Pepper

Brown the ground beef with some chopped onion and green pepper. I used half of each, but add as much as you like. Drain, then season with salt and pepper.

Add all the canned ingredients and taco seasoning. Drain the beans and corn, but you can use the liquid from the tomatoes.
Stir to combine everything, then add water until the liquid covers the other ingredients. Bring to a boil, cover, then reduce the heat to simmer for 30 minutes. Taste to see if you’d like to add more spice, but this recipe is mild and flavorful. You can always add jalapenos or a spoonful of spicy salsa to your bowl to kick things up a notch as well!
