Rotisserie Chicken Remix

Don’t you just love a rotisserie chicken? I do! They’re convenient, tasty, and pretty inexpensive. While I know you can make your own, I’m talking about the store-bought kind. These chickens aren’t huge, but I’ve still found ways to get multiple meals out of them.

Ok, the obvious way to eat a rotisserie chicken is to just cut up the pieces and serve…but what else can you do? PLENTY! Here’s how I remixed mine into chicken salad and a couple of small quesadillas.

First, pick all of the meat from the bones, shred or tear it into pieces, and put it in a mixing bowl. After you see how much you have (perhaps more than you thought), divide it into parts if you’re going to make multiple dishes.

Here’s what I used for my chicken salad:

  • Chicken
  • Mayonnaise
  • Diced apples
  • Diced grapes
  • Salt & Pepper
  • (I would have added diced pecans, but I didn’t have any)

Ok, this next part is super complicated…so try to keep up!

  • Put the diced fruit into the bowl with the chicken
  • Add about 3 tablespoons of mayo
  • Season with salt & pepper
  • Mix it all in

Haha! Clearly, I ‘m kidding! This was super easy, and although it doesn’t look the prettiest, it was very tasty. You can refrigerate the chicken salad or eat it right away. I had enough to do both…I enjoyed it with crackers right away, then the next day inside of a pita.

It may look like I used most of the chicken for the salad…well, that’s correct. I’m selfish like that! lol No really, I did leave a bit to the side to make the little boy a couple of small quesadillas.

See, just a bit. I kept it simple and seasoned with just Sazon Perfecta. Mmmm, about that seasoning…it IS pretty perfect. This one little bottle includes garlic powder, onion powder, spices (idk what…probably cumin), and salt. I like to use it on chicken, and it really gives refried beans a punch!

For the quesadillas I placed two small, flour tortillas on a foil-lined baking sheet. I sprinkled some shredded cheese then added the chicken. Next, I placed them under the broiler until the cheese looked melted.

After the cheese was nice and melted, I folded the tortilla over and let them sit for a few minutes to make sure everything was stuck together. Plus, I’ve found that toddlers don’t really like piping hot food.

Isn’t that cute? Wouldn’t you think a kid would LOVE this tasty quesadilla? Perhaps a kid WOULD love it, but that’s assuming some random adult…like his dad…doesn’t eat it instead because the kid initially refused it. *face palm* Oh, well. Just know that something this simple can be satisfying for kids AND adults.
